Raw Mint Chocolate Pie Recipe!

Okay guys, get your taste buds ready for what is possibly the most delicious thing you will ever experience! This has to be my all time favourite Raw Vegan Dessert recipe! This usually lasts me 2-3 days because I can’t stop eating it whenever I make it! I love it so much that it was made for my 21st birthday cake!

I found this recipe on Sweetly Raw  by Heather Pace – she is absolutely AMAZING! You can join the Sweetly Raw Facebook group here.
It takes about 20 – 30 minutes to create – no cooking required, just food processing, blending and freezing!

Crust:
1 cup of almonds
3/4 cup of pitted, packed dates
1/4 cup cacao powder
1/4 cup cacao nibs
1 teaspoon pure vanilla extract
Mix ingredients in a food processor until moist dough consistency.
Add 1-2 teaspoons of water if needed.
Press into a pie dish.
 
 
Filling:
2 1/2 cups cashews
1 cup lightly packed mint leaves
1 cup water
1/3 + 2 tablespoons agave
5-8 drops of mint essential oil (only if desired)
1 teaspoon of vanilla extract
Pinch of Himalayan salt
3 tablespoons of cacao butter
2 tablespoons of coconut oil
In a blender, combine all but the butter and oil until smooth.
Start with less mint oil as it is very strong!
Now add the last 2 ingredients and blend to incorporate.
Taste mixture and add more mint oil if desired.
Add to top of Crust.
 
Freeze :)
Mint Pie x

  1. Love your blog Sarah, but just wanted to flag that Agave is very high in fructose and also very highly processed to get from the plant to the state it’s in when you buy it in the bottle. I’ve done some research into it because people seem to have became almost as addicted to agave as others are to sugar.. And that’s never a good sign. High fructose foods put a heavy burden on your liver which processes fructose. The liver also is the organ behind fat synthesis and storage, glycose conversion for storage as fat etc… If you’re liver is under stress it is very detrimental to your health. Coconut nectar is lower in fructose than agave, but all sweeteners should be eaten in moderation. Agave is unhealthy.

      Thankyou so much for pointing this out. I have seen this popping up lately on a few blogs and in articles I have read. It’s a shame that procducts like this are so misleading to people who think that they are doing good for their bodies or choosing a healthier option.       I’m not too sure on this one. I know that the reason cashews work so well is because their taste doesn’t over power the recipe so when you eat the finished product, you wouldn’t even know that their are cashews in the recipe!
      I’m not sure if any other nut would have this effect, but trial and error is always good :) xxx
